Searching through Google's collection of old scanned publications, I found a couple of great articles about making cider. They are from "Popular Mechanics" and "Popular Science" and so take a typically robust approach to the process, in other words, building everything from scratch.
The first, from the November 1960 edition of "Popular Science", entitled
"The rig you need to make hard cider", shows how to make a scratter, as well as probably the smallest rack and cloth press I've ever seen. Also check out the jamjar airlock attached to the top of the wooden fermentation barrel.
"Make your own cider", from "Popular Mechanics", September 1978, shows a novel hexagonal press where the pressure is applied horizontally instead of vertically. It also includes a design for a scratter.
